Recipe: Chocolate Caramel Squares


Today marks the second Snow Day this week, after one day back to school after Christmas Break.  The kids are loving it!

It was also the perfect day to make some good old comfort food, so we decided to make a recipe that Gramma gave us for Christmas!  She packaged the dry ingredients beautifully in glass jars; all we had to do was add the butter and corn syrup!

In this video, Ezri and I make up a batch of these ooey gooey yummies.  The recipe is below, in case you’d like to try your hand at a batch of these Chocolate Caramel Squares!

 

Chocolate Caramel Squares

1/3 cup sugar

5 cups Rice Krispies

2/3 cups golden corn syrup

1 cup butter

3/4 cup packed brown sugar

2 cups chopped pecans or pecan halves

2 cups chocolate chips

 

  1. Heat corn syrup and sugar in a large saucepan over low heat until bubbly.  Stir in Rice Krispies until well coated.  Press into buttered 13×9 inch pan.
  2. Melt butter in saucepan over medium heat.  Stir in brown sugar.  Stir constantly until mixture bubbles, cook for about 1 minute. Remove from heat and stir until smooth.  Spread evenly over cereal and sprinkle pecans over top.  Press lightly into caramel layer.
  3. Melt chocolate chips in microwave and spread over everything else.  Let cool (put in fridge if needed).
