As I write this, we're looking forward to a long, hot and dry summer.
If the past few weeks of temperatures are any indication, we will want to use the oven as little as possible this summer.
But we still need desserts for potlucks and barbecues and picnics!
Here's a quick dessert that will keep your sweet tooth satisfied, without turning on the oven.
Skor Snowballs
White Chocolate, Coconut & Skor Toffee Bits with Pop-Your-Socks-Off Sweetness
Ingredients
1 pkg white chocolate chips
1/4 cup Skor toffee bits
1/4 sweetened shredded coconut
Instructions
1. Melt the white chocolate chips. Place all of the white chocolate chips in a microwave-safe bowl. Microwave on high for 30 seconds. Stir. Microwave again for 30 seconds on high. Stir. Repeat until the white chocolate chips are a creamy consistency. Note: The chips will not melt into liquid, but will be have more of a cream cheese consistency.
2. Mix the Skor toffee bits and coconut into the melted white chocolate chips. Blend well.
3. Drop small spoonfuls of the mixture onto a 9 x 13 casserole dish. (I used the large side of a melon baller to get the right size.)
4. Garnish with additional Skor toffee bits and coconut, if desired.
5. Refrigerate until firm, about 30 minutes. Enjoy!
Notes
Try this recipe with other add-ins, like dried cranberries or sunflower seeds!
Other kinds of chocolate chips (ie. milk, semi-sweet, etc) will not work with this recipe, as they have a lower melting point and will be far too runny.
If you plan on taking these to an outdoor event, consider dropping the spoonfuls into mini-muffin paper liners. This will keep the mess to a minimum if they start to melt in the sun.
