I recently found this absolutely delicious recipe for “Gramma’s Date Squares“, and had to give it a try. It’s a sweet square that you’ll want to enjoy a cup of tea or milk with.
I changed up the recipe a little, and my version is below. I think the next time I try it, I’ll decrease the sugar by a quarter cup. With the sweetness of the dates, I don’t think we’ll miss a bit of the sugar at all.
Decadent Date Squares
Ingredients
- Crust: 1 1/2 cups quick-cooking oats
- 1 1/2 cups all purpose flour
- 1/4 tsp salt
- 3/4 tsp baking soda
- 1 cup brown sugar, packed
- 3/4 c butter, softened
- 3/4 pound pitted dates, chopped
- Filling: 1 cup water
- 1/3 cup brown sugar
Instructions
- Crust: Combine oats, flour, salt, brown sugar, and baking soda in a mixing bowl.
- Cut in butter and mix til crumbly.
- Pour half of the mixture into an 8 or 9 inch pan and press into the bottom.
- Filling: Over medium heat, combine dates, water and brown sugar. Stir and cook until thickened, about 10 minutes.
- Spread filling over bottom crust. Sprinkle remaining crust mixture over the top.
- Bake at 350F for 25 minutes. Let cool completely before cutting into squares.
